Minnesota State University, Mankato held a ceremonial cake “ribbon-cutting” ceremony for its new $31.4 million University Dining Center today (Friday, Feb. 3, 2017).


“We look forward to celebrating the opening of this remarkable University Dining Center with our students,” said Davenport prior to the event. “This new dining center will provide our students with a variety of fresh, healthy food choices and many menu options for those with food allergies and specific dietary needs. We are also proud of the facility’s many state-of-the-art sustainability features, including food composting and waste reduction that encourage responsible stewardship of our resources.”


Davenport provided welcoming remarks during a short program. Other speakers included David Jones, vice president for student affairs and enrollment management at Minnesota State Mankato; student Faical Rayani, president of the Minnesota State Student Association; student Alysia Przybilla, president of Minnesota State Mankato’s Resident Hall Association; and Cindy Janney, director of Residential Life at Minnesota State Mankato.


After the program, Przybilla (left in photo above), Davenport (center) and Rayani cut a celebratory cake.


“In the University Dining Center, our students can choose fresh, healthy options that are customized to order,” said Janney. “They can see all aspects of food preparation while having a conversation with the person who is preparing their meal, then sit down to eat with friends in a beautiful, sustainably designed space. This space supports student success!”


The new dining center has the capability of serving a projected future demand of more than 3,000 students in 49,075 gross square feet of residential dining space.


The University’s previous dining facility, Carkoski Commons, was designed to serve 1,800 students in 22,155 gross square feet of residential dining space.


The state-of-the-art University Dining Center is a 61,849 gross square-foot facility that opened to students on Jan. 9.


The construction cost of the building was $25,496,000 and the project cost was $31,406,500. Funding for the project was through revenue bonds, and residence hall room and board fees will pay the debt service on the bonds.


A ceremonial groundbreaking was held May 5, 2015, and construction began in June 2015.


Minnesota State Mankato, a comprehensive university with 15,110 students, is part of the Minnesota State system, which comprises 31 state institutions.
